Ruthie's Oat-Gran Cookies


These cookies are my sweet tooth alternative. Yes, they do have sugar and some chocolate but I have developed a great recipe that contains alternatives to sugar as well as the fat. They are full of energy with nuts, flax seed, dried fruit and oats.


¼ cup butter ( ½ stick)
½ cup canola oil
¾ cup flax seed meal (alternative to butter)
½ cup white or raw cane sugar (I like turbinado raw cane because of the great texture it gives the cookies)
½ cup brown sugar
1 cup date sugar or ¾ cup date sugar and ¼ cup maple sugar
2 eggs
1 tsp vanilla
1 tsp cinnamon

½ tsp baking powder
½ tsp salt
3 cup rolled Oats
1 cup Oat Flour
½ cup almond meal flour
½ cup white flour

¾ cup raisins, dried cranberries, or mixture
¾ cup well chopped walnuts or pecans (toasting before using them make the cookies even better)
¾ cup semi-sweet chocolate chips

Blend butter, oil, sugars and eggs until creamy. Add flax meal, cinnamon and vanilla. Add baking powder, salt, and flours. Mix until combined and sticky looking. Pour in rolled oats, raisins, nuts, and chocolate chips. Mix until everything comes together.
I use a large cookie scoop for my cookie. You must press them down with your palm and flatten them before baking.

400 degrees for 8-10 min
**TIP: I only cook a small bit at a time. Though the cookies are good cold the are outstanding warm out of the oven. I scoop, flatten and freeze the rest of the dough. They can be backed straight from the freezer. When baking them frozen add 1-2 min to the time.
